Curried Sun-dried Tomato Tofu Skewers

'WhAt ArE yOu GoInG tO eAt oN a BbQ' - you know how many times I've been asked this question since I've been vegan? If I had a penny etc.
Well barbecuing as a vegan has never been easier with all the amazing options available at the supermarkets these days. From burgers to köftes, there's so much stuff you can whack on a grill but let's be honest, nothing beats making something yourself.
I'd never cooked tofu on the barbecue before so I thought this would be the perfect opportunity to test it out.
I linked up with new sauce company Yūgō Spice who kindly provided me with the most amazing curried sun-dried tomato paste. Now if you saw my avocado pesto pasta recipe and video, you'll I looooove sun-dried tomatoes, they're my kryptonite.

The paste itself is truly so flavourful and the curry only provides a slight undertone (I was worried it'd be overpowering). It'd be great with some pasta or as the base for a zesty chickpea masala - it's versatility is a true selling point!
Anyway, on to the recipe and it was really so simple that I feel bad even telling you how to make it.

What you need:
Half a jar Yūgō Spice Curried Sun-dried Tomato Paste
1 block firm tofu
1 red onion
1 red pepper
1 yellow pepper
1 courgette
Skewers
Method:
1. Drain tofu of all liquid by pressing it out under something heavy.
2. Once it's slightly more dried, cut it in half through the middle and cube it.
3. Scoop half a jar Yūgō Spice Curried Sun-dried Tomato Paste into a bowl and pour in a small amount of boiling water (two tbsps should be enough) until it becomes slightly more dilute.
4. Put the tofu in the bowl and leave to marinate for as long as you like - I left it 10 minutes.
5. Cut your vegetables (you don't have to use the ones I did, they all work great). Get your skewers and start spearing the veg onto it sticking the tofu in between.
6. Put on the BBQ until the vegetables are cooked and the tofu has a nice char to it. Alternatively you can cook them in the oven for around 15-minutes at 180 degrees.
